I am enjoying time at my parents and I wanted to share two yummy recipes that I love for sides. Wilted Kale is a great southern dish to serve with pork chops, steak, chicken...whatever you want. If you've ever had wilted salad or greens, you'll love this recipe!
Wilted Kale and Bacon
2 1/2 lbs Kale (about 4 bunches), tough stems and center ribs cut off and discarded
10 Slices of Bacon (1/2 lbs)
4 Garlic cloves, finely chopped
2 Cups water
Stack a few kale leaves and cut crosswise into 1/4 inch-wide strips with a sharp knife.
Cook bacon in a wide 6-8 quart heavy pot over moderate heat, stirring occasionally, until crisp, then transfer to a paper towel. Cook garlic in remaining bacon fat over moderately low heat, stirring, until pale golden.(about 30 seconds). Add kale (pot will be full) and cook, turning with tongs until wilted and bright green, about 1 minute. Add water and simmer, partially covered, until just tender (6 to 10 minutes). Chop bacon and toss in with the kale. Salt and pepper to taste.
Roasted Variety Potatoes
40 oz. bag of Sunrise Medley Potatoes
Salt and Pepper
Preheat oven to 350 F. Scrub/rinse and half potatoes. Spread potatoes out on a baking sheet. Drizzle olive oil over potatoes and sprinkle with salt and pepper (or you can substitute any seasoning of your choice...like seasoning salt). Bake for 30-45 min until a fork slides through easily.
You could roast potatoes or roast purple potatoes. LOL
Your guests will be impressed!!!
