Hey Everyone! It's officially less than one week until Christmas even though my poor countdown is working overtime. We're getting there! My recipe posts have begun so here we go!
Toffee Chex Mix
1/2 cup (1 stick) Butter
1 1/8 cups Firmly Packed Brown Sugar
1/4 cup Lite Corn Syrup
1/2 teaspoon Vanilla Extract
4 cups Rice Chex
4 Cups Corn Chex
1 cup pretzels
1 1/2 cups Mixed Nuts
1 cup Bittersweet Chocolate Morsels (optional)
Heat oven to 250 F. Mix butter, brown sugar, corn syrup and vanilla extract in sauce pan over med-high heat. Bring to a boil for 5 minutes.
Mix cereal, pretzels and nuts together in a roasting pan.
Pour syrup over dry mixture and mix well.
Bake 30 minutes in oven, stirring mixture every 10 minutes.
Spread on wax paper to cool.
Once cool, break up pieces as needed (add morsels at this time). Store in an airtight container.
Makes 1 3/4 lbs.
